The good news is it isn't hard if you follow a few simple tips. I'm Stephanie Gallagher, the Iron Chef Mom, and today, I'll show you how long to cook a turkey. A number of factors affect the cooking time for a roast turkey: First, the size of the turkey. Obviously, the bigger the turkey, the longer it will take to cook. Now the starting temperature of the turkey affects cooking time as well. If you're starting with a frozen turkey, which you can do - and I show you how in another video -- but it will take about 50% longer to cook than if you start with a completely thawed bird. The color and depth of the pan affects the cooking time too. Turkey will cook faster in a darker roasting pan than in a light colored pan. Also, if you use a rack, which allows air to circulate around the turkey, it will cook faster than if the turkey sits flat in the pan. A stuffed turkey will take longer to cook. But I don't recommend stuffing your bird. The internal temperature of the stuffing and the turkey both have to reach 165 degrees for safety, and usually by the time the stuffing gets to temperature, the turkey is overcooked. The temperature of the oven also affects cooking time. The best temperature for cooking a turkey is between 325 and 350 degrees. ALWAYS FOLLOW THE COOKING INSTRUCTIONS ON THE BIRD :) You will need: Turkey or Chicken 5 tablespoons of Butter 3 Tablespoons of Poultry seasoning or one table of rosemary, sage and thyme ~Preheat your oven/roaster to 350 degrees. ~In a small bowl mix the butter and seasonings. ~SLOWLY loosen the skin from the neck to the bottom. Try your best not to tear the skin. ~Generously rub the herb butter under the skin. ~Add any remaining butter to the outside of the bird. If you need more just make more :) ~Tuck the wings and tie back the legs. This will help keep the shape and moister in. Oven Directions: Place your bird in the oven and baste every 15-30 minutes. If you notice your bird is browning too fast loosely tent your turkey with foil. If you notice its getting dry pour a small amount of water with butter into the bottom of the pan. The turkey is done once the thigh reaches an internal temperature of 180 degrees. Wait 15-30 minutes before carving. Roaster directions: Place a few chunks of butter with some water into the bottom of the pan. Cover with the lid and baste every 15-30 minutes.
