    Harvest pumpkin soup Martha Stewart Serves 6 to 8 INGREDIENTS 1 small sugar pumpkin, halved, seeds and stringy fibers removed and reserved 6 tablespoons unsalted butter 3 cups homemade or low-sodium store-bought chicken stock 3 cups water 1 sprig fresh thyme 1 small parsnip (about 4 ounces), peeled and coarsely chopped 1 small Yukon gold potato (about 6 ounces), peeled and coarsely chopped 1 small turnip (about 4 ounces), peeled and coarsely chopped 2 small shallots, minced (about 1/4 cup) 1/2 cup dry white wine 3 tablespoons heavy cream 1 teaspoon packed light-brown sugar 2 teaspoons coarse salt Freshly ground pepper, to taste DIRECTIONS Preheat oven to 400 degrees. Place pumpkin halves, cut sides down, on a rimmed baking sheet. Bake until soft, about 50 minutes. Scoop out flesh, and puree in a food processor (you should have 2 cups). Melt 1 tablespoon butter in a small saucepan over medium-high heat. Add reserved seeds and fibers from pumpkin, and cook for 4 minutes. Add stock, water, and thyme, and bring to a gentle simmer. Cook for 9 to 10 minutes. Meanwhile, melt remaining 5 tablespoons butter in a large saucepan over medium-high heat. Add pumpkin puree, parsnip, potato, and turnip, and cook for 5 minutes. Add shallots, and cook until soft, about 4 minutes. Add wine, and cook until liquid has reduced by half. Strain pumpkin-seed mixture, reserving broth and discarding solids. Add broth to pumpkin-wine mixture. Bring to a simmer; cook 20 minutes. Let cool. Pass soup <b>...</b>

    In this video, Betty and Rick have dinner at the Brown Hotel in Louisville, Kentucky. We went in search of the authentic Hot Brown Sandwich. The sandwich was created in the 1920's by the chef at the Brown Hotel, where as many as 1200 guests came each evening to dance in the grand ballroom. Afterwards, in the "wee" hours of the morning, the guests would grow tired of dancing and retire to the restaurant for a bite to eat. Bored with the traditional ham & eggs, Chef Fred Schmidt delighted his guests by creating The Hot Brown--an open-face turkey sandwich with bacon, tomatoes, and a delicate mornay sauce, The Hot Brown (a Louisville tradition with worldwide appeal) has been featured in Southern Living, the Los Angeles Times, the New York Times, Wall Street Journal, and on NBC's Today Show, as well as a regular entry in many of the finest cookbooks. I have already made a hot brown sandwich that you might order at a typical Kentucky restaurant in bettyskitchen. Tomorrow, I will be uploading the true Brown Hotel Hot Brown Sandwich! Chef and restaurateur Jose Andres from The Bazaar at the SLS Hotel in Beverly Hills shares his simple and tasty recipes for white asparagus gazpacho, chickpea and tuna salad and artichokes with clams and jamon Serrano. First up: Chickpea and tuna salad Serves 2 INGREDIENTS • 1 medium ripe plum tomato • 1 14-ounce can of cooked chickpeas, drained • .5 ounce shallot, peeled and minced • 2 medium ripe plum tomatoes, seeded and diced • 1 quarter green bell pepper, seeded and cut into small cubes • Half cucumber, peeled and cut into small cubes • Sea salt to taste • 2 tablespoons Spanish extra-virgin olive oil plus extra for garnish • 1 tablespoon sherry vinegar • 1 9.15-ounce can of atun claro (tuna packed in olive oil) DIRECTIONS Grate one tomato to create a tomato puree. Set aside. In a bowl, combine the chickpeas, shallots, tomato, pepper, cucumber, olive oil and vinegar. Toss. Season with the sea salt. Spread grated tomato on the base of each plate.
